Think convenience Who knew that the most convenient vegetable -- bar none -- is the beet? It takes about five minutes of prep fresh beets for roasting. Once roasted, beets can be used so many ways. (Don't believe me? Just look at all these recipes that call for cooked beets.) And there are refrigerator salads (which keep awhile) and refrigerator pickles (pickled vegetables) prepared in larger quantities because they keep in the fridge for a couple of weeks to a few months.
