How to Eat More Vegetables: Tip #17

Get a good vegetarian cookbook. Then, for awhile, put away all other cookbooks. What you're trying to do is to remove distractions from meat-centric recipes, letting your kitchen inspiration be moved by vegetables.

Make sure the cookbook is one that's easy to browse through, one that fits your time and ingredient expectations.

My personal long-time favorite is Vegetarian Celebrations by Nava Atlas. It's the one cookbook from my vegetarian years that still appeals now.

Many of my fellow food bloggers rave about Vegetarian Cooking for Everyone by Deborah Madison; Vegetable Harvest: Vegetables at the Center of the Plate by Patricia Wells; and How to Cook Everything Vegetarian: Simple Meatless Recipes for Great Food (How to Cook Everything) by Mark Bittman. All three are on my wish list!
