Eat in season For maximum flavor and texture, eat summer vegetables (like summer-perfect tomatoes) during summer, eat fall vegetables (like winter squash) in the fall, eat leafy greens and root vegetables (like sweet potatoes and turnips) during the winter and then -- come back to summer vegetables! To every vegetable, there is a season.

Today, many of us that buy our vegetables at supermarkets. These stores are the 'retail end" of a massive and complex worldwide food distribution system -- a wonder of logistics and transportation and food storage -- but which also masks what's in season because it provides year-round strawberries and asparagus. To eat in season, we must first learn what's in season in our own areas.
